Please, I am an enrolled student at the AAI, and since we are currently on semester break, I would like to request proof of the semester break so I can work full-time during this period.

We can not issue a document which prooves that you are currently on semester break, plase ask your academic office if they can issue it for your in case your employer needs it.
Universität Hamburg doesn't restrict full time working at any time, even during the lecture period.
